Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Chili Cups

Every once in a while you need to jazz up your food a little bit right? And that’s what canned biscuits are for! I’ve always wanted to try cooking biscuits this way but was afraid it would be a big fat flop but guess what? It wasn’t at all! It was pretty fun actually. I made a small pot of chili then baked the biscuits on the backside of my muffin tin and voila! Little bread bowls! So fun! You gotta try ‘em!




Chili Cups
1 pound ground beef
1 small onion ~ diced
1 package chili mix
1 14-ounce petite diced tomatoes
1 cup salsa
Salt and pepper to taste
1 8-count package Grands Refrigerated Biscuits
In a large skillet, saute the onion in a little olive oil for about 5 minutes.
Add the ground beef and cook through.
Add the chili mix, canned tomatoes and salsa.
Simmer for 15 minutes.
Spray the backside of a 12-cup muffin tin with cooking spray.
Unwrap and separate biscuits and press flat to about a 4” circle.
Form the flattened biscuits over every other inverted cup so that the dough is not touching. (You may have to cook in batches. )
Cook according to package directions until golden brown.
Allow to cool for a few minutes then remove from the tin.
Fill with chili mixture.
Add cheese, salsa, sour cream, etc.



Let's have some fun with our food!




Saute the onions a bit then 
cook the ground beef until done.




Then add the chili mix, salsa 
and tomatoes along with some 
salt and pepper.




Simmer about 15 minutes.




Press out the biscuit dough.




Then form over every 
other inverted muffin cup.




Bake!




Then fill the cups with the chili 
and add your favorite toppings!

Cheesy Chicken Cups

Okay..so these little guys are pretty stinkin' good. They are prefect little appetizers but you could make them for dinner, too. I used won-ton wrappers which made them nice and crunchy but using puff pastry would be marvy! And if you get the pre-made puff pasty shells, then that would be even easier! The filling is really tasty and could be used with just about anything. Try biscuits! Throw some of the filling in a little casserole dish and top with a flaky biscuit! How good would THAT be?

Cheesy Chicken Cups



2 tablespoons butter
2 tablespoons flour
1 cup milk
Salt
Pepper 

1 cup grated cheddar cheese
Pinch cayenne pepper
1 large chicken breast ~ cooked and diced
1 cup broccoli, finely chopped
12 - 15 won-ton wrappers

In a medium saucepan, melt the butter.

Stir in the flour and cook, stirring constantly, until mixture cooks and bubbles, about 2 minutes. 

Add the milk, continuing to stir as the sauce thickens. Bring it to a boil. Add the cayenne pepper, salt and pepper to taste.


Lower the heat, and cook 2 to 3 minutes more, stirring continuously.

Remove from the heat. 

Add cheese and broccoli and stir until melted.

Stir in cooked chicken.

Place one won-ton wrapper into each cup of a muffin tin.

Fill cups with chicken/cheese mixture.

Bake until won-ton wrappers are golden and mixture is bubbling, about 15 minutes.

I was looking for something fun to make for ice cream. I saw a tv show the other day where these little cups were done but they used store bought cookie dough. I have a sugar cookie recipe that I love that worked great for these little guys. This is something fun to make for a kids party but we enjoyed them just to snack on. We ate some and I put the rest in the freezer so I can pull them out for a quick little "something sweet" when I don't have time for a full-on dessert. The options are endless when it comes to making them, decorating them and filling them. So fun!

Sugar Cookie Cups


1/2 cup sugar
1/2 cup powdered sugar
1/2 cup butter
1/2 cup shortening
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tarter
1 teaspoon vanilla

Preheat oven to 350 degrees.

Cream sugars with butter and shortening.

Add egg mix well.

Add dry ingredients and mix well then add vanilla.

Scoop into 1 inch balls and place dough balls into well greased mini muffin tins.

With the end of a wooden spoon, press dough down slightly.

Bake for 15 - 20 minutes until light golden brown. Do not underbake as you want the cookie cups to be sturdy enough to get out of the pan and to hold their shape. The cookies will puff up in the oven so you may have to use your wooden spoon again to achieve the cup shape while they are fresh out of the oven.

Allow cookie cups to cool for 10 minutes, then with a knife, gently remove them from the pan and allow to cool on cookie rack.

Place 1 cup of chocolate chips in a small microwave-safe bowl and heat chips at 30 second intervals until melted.

Dip the tops of each cookie cup into melted chocolate, then dip into chopped nuts, non-perils, sprinkles or any decor you like, if desired. Allow chocolate to harden then add one small scoop of ice cream. Sprinkle with more decorations and serve with a little drizzle of ice cream topping. And a cherry! Don't forget the cherry!

In small muffin tins, put a scoop of the dough in each cup. 
If you don't have one of these handy dandy little tools, 
don't worry. Just use the handle of a wooden spoon.

Bake 'em up! 
Make sure they get a little more 
done so they hold up. Let them cool in the 
pan before taking them out. See how they've puffed up? 
I took my tool and mashed them down 
again while they were still hot.


 
Melt your chocolate chips and get your sprinkles ready.


 
Turn the cookie cup upside down 
and dip the tops into the chocolate.


 
Then dip them into the sprinkles of your choice.
