I made these for dinner because as a few of you may know...I'm
not much of a breakfast eater. It's just....eh...okay. So when I make
anything breakfasty around here...it's usually for dinner. IT Guy
doesn't mind...especially if there's leftovers. Like there were of this.
This recipe made 8 GOOD sized burritos...enough for dinner and a few
for lunch for the guys for the next day. Yay for double-duty dinners. Or
breakfasts. Or lunches. Whatever.
Spicy Breakfast Burritos
8 large burrito size flour tortillas
3 cups cheese - I used a combo of cheddar/jack and pepper jack
Salsa
5 eggs mixed with about 1/2 cup of half & half
1 pound breakfast sausage - regular or spicy
Tator Tots - I used about a half of package...maybe 50 tots, cooked according to package directions
Bake the tots and set aside.
Grate the cheeses and set aside.
In a large skillet, brown the sausage. When it's done, pour in the egg mixture and cook together until the eggs are done.
Warm a tortilla in the microwave for about 15 seconds.
Starting with the tots, layer the ingredients. Roll up the burrito and place in a baking dish or wrap in foil.
Place in 300 degree oven for about 20 minutes until warmed through.....then serve.
These can be made up a day or so in advance then rewarmed in the oven.
