A long time ago my sister-in-law gave me a recipe for chicken in the
crock pot that was so easy and crazy good. Here's a fun spin on that
same recipe. Adding some cheese and broccoli makes you think you're
actually doing something a little healthy, doesn't it? This little dish
is great to have on a chilly night and it's so easy. Everything gets
dumped into the crock pot except the sour cream and the broccoli then
you basically forget about it until you stir in those last two
ingredients. Serve over rice....BOOM! Dinner!
Easy Cheesy Chicken and
Broccoli Over Rice
4 - 5 chicken breasts
2 cans cream of chicken soup
1 can cheddar soup soup
1 14-ounce can chicken broth
salt and pepper to taste
1/2 teaspoon Cajun seasoning
1/4 teaspoon garlic salt
1 cup sour cream
1 10-ounce bag frozen broccoli ~ steamed
Place chicken in the bottom of your crock pot.
In a medium bowl, combine the soups, chicken broth and seasonings. Stir well then pour over chicken.
Allow to cook on low for 6 - 8 hours or until chicken is tender.
Shred chicken with two forks.
Stir in the sour cream thoroughly.
Gently stir in the steamed broccoli.
Serve over rice.
