Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Oh my...but these were good! How fun would these be at a shower or brunch? And so easy, too! Of course....when I made them, I wasn't having a shower or a brunch so IT Guy and I enjoyed them just for fun! I stored the strawberry mixture in the fridge and made us a bellini whenever the mood hit me. I think the mood hit me for about three days. Yum!

Pretty in Pink Strawberry Bellinis (non-alcoholic)



2 cups strawberries – washed and hulled
¾ cups water
½ cup sugar
3 tablespoons lemon juice
Sparkling Apple Cider

In a medium saucepan, combine strawberries, sugar and water. Bring to a boil and cook for 3 minutes. Remove from heat, add lemon juice and set aside to cool.

Pour cooled strawberry mixture into food processor and blend until smooth. Strain to remove seeds.

For individual servings, pour 2 tablespoons of the strawberry puree into a small glass then add ¼ cup plus 2 tablespoons Sparkling Apple Cider. Garnish with a strawberry and mint leaves.



This is so easy....here's what you need.


Combine the strawberries, water and sugar.


Boil the mixture for about 3 minutes.


Remove from the heat and add the lemon juice. Cool to room temp. I put mine in my sink with some cold water and ice cubes to hurry up the process.


When it's cooled, pour the mixture into your food processor or blender.


Puree it until it looks happy and blended.


Strain the mixture to remove the seeds.



This is what the mixture will look like after it's strained.


So delicious! Great for brunches or girly parties.
