I know that there are a TON of recipes out there for soup made with
the leftover hambone. Most have beans. This yummy recipe does not. It's
got a lot of veggies but you could certainly add the bean of your choice
if you wanted to. This turned out so good. And it was SO easy!
Hambone Soup
3 large carrots, sliced
3 stalks celery, diced
1 medium onion, diced
2-3 large potatoes, diced (I used unpeeled
Yukon Golds)
3 cloves garlic, minced
1 tablespoon dried parsley
2 bay leaves
2 large yellow squash, diced
2 large zucchini, diced
2 - 3 cups leftover ham
salt and pepper to taste
Place ham bone in a large stock pot and cover with water. Boil 45 minutes.
Remove bone from water, cool then take meat off the bone.
Add the veggies to the pot.
Season with salt and black pepper.
Cook until veggies are tender.
Add meat to pot. Bring to a simmer and allow to heat through.
