Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Ziti Meatball Mozzarella Casserole

I had some frozen meatballs leftover from another dish and I needed to use them in SOMETHING. Scrounging around in my pantry I found some ziti pasta. Looking further in my pantry I discovered a jar of marinara sauce. I crossed my fingers that I had some mozzarella cheese in the fridge and I DID! And this casserole was born. Super easy, guys...and super good!

Ziti Meatball Mozzarella Casserole
8 ounces Ziti pasta ~ cooked and drained
1 32-ounce package pre-cooked frozen Italian meatballs
1 28-ounce jar marinara sauce
2 cup grated mozzarella cheese
1 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1 teaspoon dried parsley.

Preheat oven to 375 degrees. Spray a 9x13 inch baking dish with cooking spray.
Pour half the sauce in the bottom of the prepared pan.
Sprinkle with 1 teaspoon of Italian seasoning.
Arrange meatballs on top.
Add cooked pasta on top of meatballs.
Pour remaining sauce on top and sprinkle with remaining teaspoon of Italian seasoning.
Scatter cheeses on top then sprinkle with dried parsley.
Cover with foil and bake for 45 minutes until hot and bubbly.

Okay...here we go.
Oops! I forgot the parsley!

Pour half the sauce into the pan then sprinkle in half of the Italian seasoning.

Next add the meatballs.

Next the ziti then the rest of the
sauce then more Italian seasoning.

Sprinkle with the
cheese then the parsley.

Cover with foil then
bake until hot and bubbly.

Super yum, guys!
