Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Breakfast Tacos

These breakfast tacos are super easy to make. If you're not a chorizo fan, like me, then leave it out and use all breakfast sausage. IT Guy loves chorizo so he really liked these. Not only do they make a great breakfast, but they're yummy for dinner too! Also if you've got any leftover, wrap in a tortilla for a burrito!

Breakfast Tacos 



1 9-ounce package chorizo sausage
8 ounces breakfast sausage
8 eggs
1/4 cup milk
Grated Monterey Jack cheese ~ about 1 cup or so
8 - 10 flour tortillas
Salsa

In a large skillet, cook both sausages until done. Remove to a plate.

In a medium bowl, whisk together the eggs and milk. Salt and pepper if desired.

Pour eggs into the skillet and scramble until almost done.

Add the meat back into the skillet with the eggs and cook and stir until done.

Heat flour tortillas in the microwave.

Place a small amount of grated cheese into the tortillas, then some of the egg mixture. Top with salsa.

Serve!
