Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Raspberry Chipotle Honey Wings

I love chicken wings for a couple of reason. One is that they’re just yummy and there are so many ways to cook them and the other way is because they’re pretty cheap. So when I bought a 4 pound pack of wings a while back, I decided right then and there I was going to cook the whole ding-dang pack in one sitting. And I did. There are so many bbq sauces out there to try that I picked one I’d never had before to use as a base for the sauce that goes over these wings. Ummm...so yeah....GOOD doesn’t begin to describe these. IT Guy and I polished off a 4 pound pack of wings in TWO days. I could’ve eaten more but wanted to save some for lunch the next day. I fried my wings before tossing them in the sauce, but baking them would work too. Just baste the wings every 15 minutes or so until the wings are done. I prefer the frying method, but that’s just me. It’s a little more work but worth it, in my opinion. I like the crunch! So so so so so so GOOD!!

Raspberry Chipotle Honey Wings
1 4-pound pack of wings ~ tips removed then remaining wing split
1 cup Sweet Baby Ray’s Raspberry Chipotle BBQ sauce
1 cup honey
2 tablespoons soy sauce
1/2 teaspoon ground mustard
1/2 teaspoon - 1 teaspoon cayenne pepper ~ depending on how spicy you like it
2 cups flour
2 eggs
1/2 cup milk
Heat 2 - 3 cups of oil in a large skillet over medium heat.
Place flour in a gallon sized zip-top bag.
Crack eggs into another gallon sized zip-top bag then add the milk.
Squish the eggs and milk together in the bag until well mixed then add all the chicken wings and toss to coat all wings.
Add half of the wings to the flour and toss until wings are coated. (I like to do “like” pieces together so they all cook the same...I’m OCD like that.)
Drop the wings into the hot oil and fry on both sides until golden brown and done.
Drain on paper towels.
In a small sauce pan, combine the BBQ sauce, honey, soy sauce and ground mustard. Simmer mixture for about 10 minutes.
Place cooked chicken in a large bowl then pour the warm sauce over the chicken and toss gently to coat.
Remove to a plate and dig in!

Let's cook some wings!!

Combine the eggs and
milk in a zip-top bag.

Add the chicken and coat, making
sure to get all the chicken covered.

Then drop the chicken into the bag with the flour and toss to coat. I did this step in two batches.

Next fry the chicken in oil over
medium heat.

Make the sauce! combine the bbq sauce, honey, ground mustard, soy sauce and cayenne pepper in a saucepan and simmer for about 10 minutes.

Place the cooked chicken in a large bowl then pour the sauce over the chicken and toss to coat.

Oh yeah!!

Pineapple Chicken Wings

Yep, yep, yep! These wings are SO good! If you like making Asian food at home then you are in for a treat because these are good, good, good! Now of course IT Guy wouldn't touch them because he's crazy and doesn't like stuff like this...but I can tell you it's very yummy! And easy, too! These would make great appetizers for your next party or tailgate extravaganza!

Baked Brown Sugar Chicken Wings

These are awesome! I love me a good chicken wing and really prefer them fried but baking them with the brown sugar glaze on them then smothering them in more glaze...pretty stinkin' good! And so easy! I sent the leftovers home with my daughter for her hubby who is a chicken wing maniac...and I have to say...I'm regretting that decision because I loved them so much. I guess that's a good excuse to make more, right?

Baked Brown Sugar Chicken Wings

1 1/2 cups ketchup
3/4 cup packed light-brown sugar
1 1/2  tablespoon Worcestershire sauce
1 1/2 tablespoon apple cider vinegar
Coarse salt
Ground pepper
4 pounds chicken chicken wings, patted dry

Preheat oven to 450 degrees. Spray a large cookie sheet with cooking spray or cover with foil.

In a medium bowl, whisk together ketchup, sugar, Worcestershire, vinegar, salt and pepper.

Cut wing tips off of chicken wings, then divide the remaining wings in half at the joint.

In large bowl, toss wings with half of the sauce. (Reserve the rest of the sauce for cooked chicken.)

Place chicken wings on the prepared cookie sheet. I like to put the "drumettes" along the outside edge of the pan and the smaller wing portion to the inside for more even cooking.

Bake wings for 20 minutes. Toss then continue baking for another 10 - 15 minutes. I even set mine under the broiler for about 5 minutes to crisp the skin a little bit.

Place cooked chicken into a large clean bowl and toss with remaining sauce. Here we go!

Gotta love sticky wings, right?  At least I do! In fact...my whole family does. When my son-in-law eats wings, he sucks every tasty morsel off those wings...there's nothing left! And that's how it should be..because when the wings are as good as these...you don't want to leave anything behind!!! These. Are. Awesome.

Sweet, Smokey and Spicy
Chicken Wings

2 eggs
2 cups self rising flour
2 tablespoons chili powder – divided use
2 tablespoons ground black pepper
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon seasoned salt
4.5 pounds chicken wings, rinsed and dried
1/2 cup honey
1 cup barbecue sauce
1 tablespoon brown sugar
3 tablespoons apple juice
3 teaspoons Liquid Smoke

Beat eggs in a large bowl. Dump in the wings and toss to coat. Or put the eggs in a large zip top bag, mush them up then throw the wings in and mix.

Combine flour, 1 tablespoon of the chili powder and the rest of the seasonings in a large zip top bag.

Working in batches, coat chicken wings in flour mixture until all are coated.

Fry wings in heated oil, in batches until all are done. Drain on paper towels.

Combine bbq sauce, honey, brown sugar, remaining tablespoon of chili powder, Liquid Smoke and apple juice in a sauce pan and bring to a simmer. Pour sauce over wings in a large bowl and toss to coat.

Here's everything you need for these yummy wings!

Mix the flours and the spices.

Toss the wings around in the beaten
eggs then in the flour/spice mixture.

Fry 'em up!

Mix the stuff for the sauce then heat it up.

Pour the sauce over the hot wings.

Then proceed to lick your fingers!!! SO YUM!!!!

Honey Chipotle Chicken Wings

A long time ago, in a galaxy far, far away....something new came on the scene that I loved. KFC introduced their Honey Barbecue Wings. Oh my....I could sit and eat those all day long. Personally I think they're not as good now as they used to be, but back in the day, I could eat my weight in wings. I have been known to send IT Guy out for them after the kids were in bed so I wouldn't have to share them. I'd hide the leftovers in the fridge so the kids wouldn't find them then I'd have the wings for lunch while the little darlings were at school eating their yummy sack lunches. How mean was I? Eh...what they didn't know, didn't hurt 'em!! ;-) A while back I made a honey-chipotle sauce that was SOOOO good. So far I've put it on meatballs and meatloaf (Yuck. Yuck to meatloaf...not "the sauce"). So when I was at the grocery store the other day, I spied chicken wings!! YES!!! So far, my favorite way to use "the sauce"...............if you don't make anything else you see here on SFFS....PLEASE make these!! Oh. My. Stinkin. Goodness. I could have eaten the whole batch! And unless I didn't hide them well enough from my kids...there's just enough for my lunch today!!!!!

Honey Chipotle Chicken Wings

25 whole chicken wings - or one of the great big packages
2 cups self rising flour
1 tablespoon Lawry’s Seasoning Salt
1 teaspoon garlic powder
2 eggs

Remove tips from chicken wings and discard. Cut remaining chicken wing in two, splitting at the bone.

In a large skillet, add about an inch of cooking oil. Heat to medium-medium high heat.

In a large bowl, beat the eggs. Dump wings into the bowl and toss until all the wings are coated with the beaten eggs.

In a large zip top baggie, combine flour, Lawry’s salt and garlic salt. Add 6 or 7 wings at a time to bag and shake until coated. Repeat until all chicken has been coated.

Fry chicken wings in batches for about 3 – 4 minutes per side until they’re all cooked and golden brown and crispy. Drain on paper towels. Keep cooked wings in a warm oven until all chicken is cooked.

Honey Chipotle Sauce ~ AKA "The Sauce"

1 cup ketchup
1/2 cup brown sugar
1/2 cup honey
3 tbsp chipotle peppers in adobo sauce
4 tsp apple cider vinegar
3 tsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp salt, or to taste
pinch ground pepper, to taste

Combine all ingredients in a food processor and blend until very smooth, 1-2 minutes. Heat in a saucepan until warm.
Makes about 2 cups of sauce.

Place cooked chicken wings in large bowl. Pour warmed sauce over wings and toss. Transfer to a large platter and serve!
