Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. I love a good onion ring. So does #1 son. He's loved them since he was a little tiny boy and used to call them earrings. So when I looked in my pantry and spied an onion sitting next to the Panko bread crumbs, I knew there was something wonderful about to happen. These are every bit as good as what you can get in a restaurant and are even delicious leftover. I threw them on a cookie sheet and popped them into a 350 degree oven for about 10 minutes and they were just as good as they had been fresh out of the fryer!

Onion Rings



2 large onions
milk
1 cup flour
1/2 cup bread crumbs
1/2 cup panko bread crumbs
2 eggs
salt and pepper to taste
Oil for frying

Slice onions 3/4 inch thick and place in a bowl. Cover with milk and set aside.

Place flour in a shallow bowl and season with salt and pepper.

Combine both bread crumbs in a separate shallow bowl and season with salt and pepper.

Beat eggs in a small bowl.

Dredge onions rings in flour then egg then bread crumbs.

Fry in a large skillet until golden brown on both sides.

Drain on paper towels and keep in a warm oven.




The ingredients....



...oops...and the eggs. 
You kinda need these.


Slice the onions in 3/4 inch slices, 
put them in a bowl and pour the milk over the slices.


Meanwhile, assemble the other things.


Dredge the slices in the flour, 
then the egg then the panko.


Then fry!


Then eat!!!
