Our A/C has been out for a few days and it's been pretty warm
around here. Of course that means it's too hot to cook inside so I
whipped up these little teriyaki treats for the grill. Yum! Now IT Guy
won't touch anything with an Asian flair to it (he's missing OUT!) so I
grilled him some chicken thighs and doused them with BBQ sauce and he
was happy. And I was happy eating these little skewers of deliciousness.
The marinade was so good...just perfect, and cooking them on the grill
only took a matter of minutes! The sauce can be put on just about
anything but I liked the fun of the ka-bob!
Teriyaki Chicken Skewers
1/4 cup soy sauce
1 cup water
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
5 tablespoons packed brown sugar
1 -2 tablespoon honey
1 tablespoon cornstarch
2 - 3 boneless, skinless chicken breasts, cut into 1" cubes
In a small sauce pan, combine all ingredients.
Heat until sauce thickens.
Cool to room temperature then pour over cubed chicken to marinate several hours in the fridge. (I put mine in a plastic zip top bag.)
Makes about 1 1/2 cups sauce.
Soak about a dozen wooden skewers in water for about 10 minutes.
Thread marinated chicken, some fresh pineapple chunks, red onion pieces and bell pepper chunks onto a skewer and grill until chicken is done.
Discard leftover sauce.
