You know...living in the south means at almost every potluck or get
together, you can be assured that a red velvet cake will show up
somewhere. So I figured...if you can eat red velvet cake...why not red
velvet pancakes? I found out you can!!! These were so fun! How neat
would they be on Christmas morning?? Of course I served them with a
touch of cream cheese icing along with maple syrup. Yum!!
Red Velvet Pancakes
2 cups flour
2 tablespoons cocoa
4 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
2 eggs
1/4 cup oil
Red food coloring
Heat a griddle or skillet over medium/low heat.
Mix dry ingredients together in medium bowl.
Combine eggs, buttermilk and oil in a separate bowl and stir just until blended.
Add red food coloring.
Add the wet ingredient to the dry ingredients just until combined. Batter will be slightly lumpy.
Drop batter by 1/4 cupfuls onto warm griddle.
Cook until bubbles begin to form on top...a couple of minutes.
Flip over and cook another couple of minutes.
Serve warm with maple syrup and cream cheese frosting. (Recipe follows)
Cream Cheese Frosting
4 ounces softened cream cheese
3 tablespoons butter
1 cup powdered sugar
1 teaspoon vanilla
Milk
Whip
cream cheese and butter in a mixer until combined. Add vanilla. Slowly
add powdered sugar and enough milk to make a frosting.
