WARNING: Look away if you're easily frightened. We'll be using processed cheese in this recipe.
love salsas and dips around the SFFS. If we want a snack while watching
a movie or something, we almost always go for chips and salsa. So I
knew when I made this dip, that it would make my crowd happy. It can be
easily doubled to feed a larger crowd, too!
Skillet Queso Dip
1 small onion ~ finely diced
1 clove garlic ~ minced
1 pound Velveeta cheese ~ cut into large chunks
1 16-ounce can chili (I used the one with no beans)
In a large skillet (I used my cast iron), saute the onions and garlic in a little olive oil until caramelized.
Add the Velveeta and the chili and simmer, covered, until cheese has melted and mixture is hot. Stir occasionally.
Serve with tortilla chips.
