Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Beefy Nacho Soup

Number 1 Son LOVES nachos. When we go out for Mexican food, I'm not sure he ever orders anything else. If I've got the stuff here at the house to make them, he's a happy guy. What he doesn't love is soup. He enjoys the flavor of soup but as he says..."I don't like to drink my dinner". So I knew when I made this I needed to make it thick enough that he would a) be happy with it as a soup or b) be able to pour it directly on top of chips. Well...guess what? It's both! Not only is this super tasty but it can double as a soup OR a topping!

Beefy Nacho Soup



1 pound ground beef
1 medium onion ~ diced
1 clove garlic ~ minced
1 10-ounce can Rotel tomatoes with green chilies
1 10-ounce can Fiesta Nacho Soup
1 15-ounce can pinto beans
1 packet taco seasoning
2 cups milk
2 cups grated cheddar cheese

In a large dutch oven, saute the onion and garlic for a few minutes then add the ground beef. Cook until ground beef is done.

Add onion, garlic, Rotel tomatoes, soup, pinto beans, taco seasoning and milk.

Stir to combine then simmer for an hour.

Stir in 1 cup of the cheese until melted.

Serve with tortilla chips and remaining cheese.

Super Nacho Pizza & a Coupon!!!

Here it is!! Our first recipe featuring Mama Mary's pizza crusts! With the Super Bowl coming up on Sunday, I figured a lot of you might be noshing on nachos and pizza. Am I right? So why not combine the two? Be still my heart, but these were good! From start to finish this took about 30 minutes to make and less than half that time to eat. #1 son...who is a huge lover of nachos and pizza, proclaimed it a roaring success. The pizza crusts baked up to perfection and were just the right crispiness to hold all the nacho goodness. I'm certainly not going to wait until the next year's Super Bowl to make this again.

Super Nacho Pizza



1 2-pack package Mama Mary's pizza crust
1 pound ground beef
1 package taco mix
1/2 cup chunky salsa
1/2 cup sour cream
1 medium tomato ~ diced
2 cups shredded cheese
1 4-ounce can sliced black olives
3 green onions ~ diced
1 cup nacho cheese sauce
1 7-ounce jar jalapenos ~ optional
Sour cream and salsa


Brown ground beef in a skillet. Add the taco seasoning packet and cook according to the directions. 

In a small bowl, combine the salsa and the sour cream and spread over the pizza crusts.

Top pizza crusts with the cooked meat, green onions, tomato, olives and shredded cheese. 

Bake according to directions on the pizza packaging.

Remove pizza from oven and drizzle with nacho cheese sauce. Return to the oven for 5 more minutes.

Remove from the oven and top with jalapenos.

Serve with sour cream and extra salsa.

Don't forget the cheese! Bake it according to the pizza package directions.

At the end of the cooking time, add the nacho cheese and bake another 5 minutes.

Nacho Casserole

My oldest son is a nacho lover. Whenever we go out to eat....and it doesn't matter where....if nachos are on the menu, he's going to get them. Minus tomatoes. None of my kids like tomatoes. Why is that? They really don't know what they're missing, do they? This dish is SO much easier than making individual plates of nachos for everyone. It all goes in one dish, heat it up and serve it with chips and you're done! And my nacho lovin' boy? He LOVED this! Score!!



Nacho Casserole



1 pound ground beef
1 small onion, chopped
1 4-ounce can diced green chilies
1 4-ouncel can sliced olives
1 cup salsa
1 16 ounce can refried beans
3 green onions, chopped
2 cups shredded cheese
1 tomato, diced
1 teaspoon salt
½ teaspoon pepper
1 teaspoon cumin
Sour cream
Guacamole
Tortilla chips

Saute onion in a little olive oil. Add ground beef and cook through. Season with salt, pepper and cumin. Set aside.

In the bottom of a 9x11 inch casserole dish, spread the refried beans. Sprinkle meat over beans. Spread chilies over meat then add the shredded cheese. Drizzle salsa over cheese.

Bake at 350 for about 30 minutes.

Remove from oven and sprinkle with green onion, olives and tomatoes. Dollop with sour cream and guacamole. Serve with chips on the side.

Serves about 6

Bake it up then top...or sprinkle...with the green onions, olives and tomatoes. You'll notice that mine only has tomatoes on one end so my kids don't think I'm trying to poison them or something.
