Key Lime Meltaways
1 ½ sticks butter – room temperature
1/3 cup powdered sugar
Grated zest of 4 Key Limes
2 Tablespoons Key Lime juice
1 Tablespoon vanilla
2 cups flour, less 2 tablespoons
2 Tablespoons cornstarch
¼ teaspoon salt
Extra powdered sugar for dredging
In the bowl of an electric mixer fixed with the whisk attachment, cream butter and powdered sugar until fluffy. Add lime zest, juice and vanilla and beat again until fluffy.
In a medium bowl, stir together the dry ingredients. Add to butter mixture, mixing on low speed until combined and dough comes together.
Divide dough in half and roll out onto parchment paper into two 1 ¼ inch diameter logs. Chill at least 1 hour.
Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Unwrap dough from parchment paper and slice into ¼ inch-thick round slices. Place rounds on baking sheets, spaced 1 inch apart.
Bake cookies until barely golden, about 15 minutes. Transfer to a wire rack to cool slightly, just 3 – 4 minutes. While still warm, dredge cookies in powdered sugar until well coated.
