Yeah, yeah, yeah....I know. I already posted a mashed potato casserole. But let's be honest here, shall we? Can you EVER have enough potato recipes? This one is SO yummy...and guess what? It has ZERO butter in it. And if you ignore the heavy cream, cream cheese, cheese, bacon and sour cream ..it has ZERO fat, too!! ;-) If you're feeling naughtier than naughty, go ahead and throw some butter into the mix...I won't tell. I might show up on your doorstep to help you eat, but I won't tell!

Another Loaded Mashed Potato Casserole


4 cups mashed potatoes (Yukon Golds or Red – skins on)
1/3 cup heavy cream
1 package (8 ounces) cream cheese, softened
½  cup sour cream
1/2 teaspoon garlic salt
Salt and pepper to taste
3/4 cup shredded Cheddar cheese
12 slices bacon, crispy cooked and crumbled

 Preheat oven to 350°F.

Place all ingredients, except cheese and  bacon, in large bowl. Beat with electric mixer on medium-high speed until potatoes are smooth and creamy.

Spoon mixture into lightly greased 13x9-inch baking dish. Sprinkle with cheese and half the bacon. Cover.

Bake 20 minutes, remove foil, then sprinkle remaining bacon on top and cook another 10 minutes.

Everything you'll need for this easy dish....

Dice your bacon then fry it up and let it drain.

Combine the cream cheese, sour cream,
heavy cream, salt, pepper and garlic salt.

Mix it up good then add your diced, cooked potatoes.

Dump the potato mixture into a greased 
casserole dish then sprinkle with the 
cheese and HALF of the bacon. 
Let it heat up for about 20 minutes.

Then throw on the remaining bacon 
and let it rip another 10 minutes.
