Chocolate Caramel Pecan Oatmeal Bars

Holy cow but these are good! IT Guy walked in the door from work and dove right in and could not stay out of them. These are so easy to whip up and makes a nice pan full of yumminess. Great for lunches or an evening snack. And I bet you can’t eat just one.

Chocolate Caramel 
Pecan Oatmeal Bars
 
1 box yellow cake mix
2 1/2 cups quick oats
3/4 cup (1 1/2 sticks) butter ~ melted
Dash of salt
1 11-ounce package chocolate chips
1 cup chopped pecans
25 caramels ~ unwrapped
1 tablespoon water
 
Preheat oven to 350 degrees.
 
Pour chopped pecans in a 9x13 inch pan and toast in the oven for 5 minutes.
 
Place pecans on a plate to cool.
 
Spray the 9x13 inch pan REALLY well with cooking spray. 
 
Increase oven temperature to 375 degrees.
 
In a large bowl, combine the cake mix, oatmeal and melted butter. 
 
Stir with a fork until well mixed.
 
Place half of the oatmeal mixture into the prepared pan. Press down.
 
Sprinkle with chocolate chips and toasted pecans then scatter the remaining oatmeal mixture on top.
 
Bake for 30 minutes or until lightly browned around the edges.
 
In a small bowl, combine the unwrapped caramel and the 1 tablespoon of water. Microwave for 1 minutes stirring every 15 seconds until smooth.
 
Drizzle caramel on top of oatmeal bars.
 
Cool, slice and eat!

Combine the cake mix, 
oatmeal and melted butter.

Crumbly!

Add half of the crumble mixture 
to the pan then add the chocolate 
chips and pecans.

Then the rest of the crumble mixture.

Bake!

Melt the caramels with the water and stir until smooth. then drizzle over the cooked bars.

Cool, slice and eat!

White Chocolate Dipped Cranberry Pecan Oatmeal Cookies

We went to a potluck a while back and one of the things I brought were these cookies. I left a few at home for the family to munch on but took the majority to the potluck. It was a rainy day and we were one of the first to leave so of course I had to take my cookies with me. I guess they went over pretty well, because as we were leaving, people were asking me...."are those the cookies?" "did you make those?" "can I have a couple before you leave?". So my hopes that I would be taking some home were quickly dashed as I looked into the container and saw just a few left. We came home, I had one, IT Guy had a couple and then there was one lonely little cookie left and it was in crumbs. Right about then my mom called and asked if there were any cookies left. IT Guy told her the condition of the ONE that was left and she said, "that's okay. Save it for me." So I'm guessing these were a success. What do you think?

White Chocolate Dipped 
Cranberry Pecan Oatmeal Cookies



3/4 cup butter flavored shortening
1 cup brown sugar
3/4 cup granulated sugar
1 egg
1/4 cup water
1 teaspoon vanilla
2 cups quick oats
1 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
1 cup Craisins
1 cup chopped pecans (plus a little extra for sprinkling)
1 12-ounce package white chocolate chips ~ melted


Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.

Combine shortening, brown sugar, granulated sugar, egg, water and vanilla in a stand mixer. Cream together until smooth.

Add flour, oats, salt and baking soda. Beat until mixed well. Add Craisins and pecans.

Drop by spoonfuls onto baking sheets and bake for 12- 15 minutes or until lightly browned.

Let set on cookie sheet for 5 minutes then transfer to a wire cooling rack to cool completely.

Dip half of cooled cookie into melted white chocolate, sprinkle with a little chopped pecans and allow chocolate to harden.

Makes about 3 dozen cookies

Oatmeal Cherry Crumble Bars

This makes a big ole pan of goodness, right here. These easy bars are perfect for a snack or breakfast or to throw in a lunch. Warmed, with a big scoop of ice cream would be a little bit of heaven, I think. If you've of a mind, stir a dash of almond flavoring into the cherries before adding it to the crust. Then sprinkle some sliced almonds on the top crust before baking! So delish!

Oatmeal Cherry Crumble Bars



1 21-ounce can cherry pie filling
1 cup packed light brown sugar
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cup rolled oats
1 cup butter ~ softened

Preheat oven to 350 degrees. Spray an 9x13 inch pan with cooking spray.

Combine brown sugar, flour, baking soda, salt, and rolled oats.

Cut in the butter with a pastry blender until crumbly.

Press 3-4 cups of the mixture into the bottom of the prepared pan.

Spread the cherry pie filling almost to the edge.

Sprinkle the remaining crumb mixture over the top, and press lightly.

Bake for 35 to 40 minutes in preheated oven, or until lightly browned.

Allow to cool then cut into bars.

Apple Pie Oatmeal Cookies

I love oatmeal cookies and so does IT Guy. He also loves apple pie. Me? Not so much. It's okay I guess but I don't enjoy it like he does. But I figured how could I go wrong combining the two. And guess what? I wasn't wrong. IT Guy loved these! I think the only way they would have been better for him was if I had added a cup or so of chopped pecans....because he's all about those. These ended up crispy and delicious!

¾ cup butter flavored shortening
1 cup brown sugar
½ cup granulated sugar
1 egg
¼ cup water
1 teaspoon vanilla
2 cups quick oats

2 cups diced apples ~ small dice

Combine shortening, brown sugar, granulated sugar, egg, water and vanilla in a stand mixer. Cream together until smooth.

Add flour, oats, salt and baking soda. Beat until mixed well.

Add the diced apples and mix to combine.

Drop by spoonfuls onto baking sheets and bake for 12 – 15 minutes or until lightly browned and crisp.

Let set on cookie sheet for 5 minutes then transfer to a wire cooling rack.

Orange Slice Oatmeal Cookies


Okay...so I can already see some of you turning up your nose at the name of this recipe. I think I'll see it turn up even more when you know that the "orange slice" in these little gems are the "gumdrop" type of orange slice candies. But wait...don't give up so easy. These cookies are GOOD! It's a basic oatmeal cookies recipe but instead of using raisins you use orange candy that has been cut up into chunks. I have to say...these are incredibly addicting. A little warm, right out of the oven...and you'll think "where have you been all my life, my little darling?" Really...they are SO good. Please try them. For the sake of all that is good...and these cookies ARE.....bake them today! 

Orange Slice Oatmeal Cookies


Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.

¾ cup butter flavored shortening
1 cup brown sugar
½ cup granulated sugar
1 egg
¼ cup water
1 teaspoon vanilla
2 cups quick oats
1 cup flour
1 teaspoon salt
½ teaspoon baking soda

1 2-pound container of Orange Slice Candy – cut into small pieces
2 tablespoons flour

Combine cut up candies and 2 tablespoons flour. Toss well to coat the candy pieces and separate the sticky pieces as you go.

Combine shortening, brown sugar, granulated sugar, egg, water and vanilla in a stand mixer. Cream together until smooth.

Add flour, oats, salt and baking soda. Beat until mixed well.

Add the orange candy pieces and mix well. Drop by spoonfuls onto baking sheets and bake for 10 – 12 minutes or until lightly browned.

Let set on cookie sheet for 5 minutes then transfer to a wire cooling rack.

Makes about 3 dozen

White Chocolate Chip Oatmeal Pecan Cookies



What a great cookie! This made about 3 dozen cookies and lemme tell ya…they only lasted a few days. Every time IT Guy would eat one, he would say “these are the BEST cookies…I LOVE them.” Of course that’s all I needed to hear! Really…you should make these…your family will smile BIG time!





White Chocolate Chip

Oatmeal Pecan Cookies




¾ cup butter flavored shortening
1 cup brown sugar
½ cup granulated sugar
1 egg
¼ cup water
1 teaspoon vanilla
2 cups quick oats
1 cup flour
1 teaspoon salt
½ teaspoon baking soda
1 12-ounce package white chocolate chips
1 1/2 cups chopped pecans

Preheat oven to 350 degrees. Line two cookie 
sheets with parchment paper.

Combine shortening, brown sugar, granulated sugar, egg, 
water and vanilla in a stand mixer. 

Cream together until smooth. 

Add flour, oats, salt and baking soda. Beat until mixed well.

Add white chocolate chips and pecans. Mix well.

Oatmeal Almond Cinnamon Cookies

If you want a delicious, crispy AND chewy cookie...then try these! We went through a batch of these in just a couple of days. It's one of those cookies that's easy to grab and munch on as you walk by the cookie jar. I'm not kidding when I say how good these are! The golden raisins are way better than regular raisins in my opinion so they make these cookies extra special. Good, good, good!!!

Oatmeal Almond Cinnamon Cookies



3/4 cup shortening (I used butter flavor)
1 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup water
1 teaspoon vanilla
2 cups oats
1 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
1 cup golden raisins
1 cup slivered almonds

Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper OR spray with cooking spray.

In a large mixing bowl, combine the shortening, brown sugar, sugar, egg, water and vanilla. Beat until smooth.

Add the oats, flour, salt, baking soda and cinnamon. Mix until smooth.

Add the raisins and almonds and stir just until combined.

Drop by teaspoonfuls (or use a cookie scoop) onto prepared pans.

Bake 10 - 12 minutes until lightly golden brown. Cool on wire racks.

Nutella Oatmeal Bars

You're not going to believe this but until I made these bars the other day, I had never tasted Nutella. Never. Ever. In my life. I've seen all kinds of recipes all over the place using it and I've seen it at the grocery store, but never tried it. My daughter has been telling me for months that I need to try it so, on a whim, I picked some up at the store. I decided to use my jam bar recipe for these and let me tell you....wow. Just wow. Unbelievably delicious. Really...you gotta try these. Soon.

Oatmeal Nutella Bars



1/2 cup packed light brown sugar
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup rolled oats
1/2 cup butter, softened
3/4 cup Nutella

Preheat oven to 350 degrees. Spray an 8 inch square pan. Line with foil and spray the foil.

Combine brown sugar, flour, baking soda, salt, and rolled oats.

Cut in the butter with a pastry blender until crumbly.

Press 2 cups of the mixture into the bottom of the prepared pan.

Spread the Nutella almost to the edge. It might help to warm the Nutella for easier spreading.

Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.

Bake for 35 to 40 minutes in preheated oven, or until lightly browned.

Allow to cool then cut into bars.
