I made a corned beef brisket the other day and since I'm not a
cabbage lover I made these to go along with said brisket. I've never
made these before but have seen them all over the web and decided to
whip up my own version. These were loverly. And SO easy! A different
little twist on a regular potato...not mashed or baked...well, kinda
mashed and baked but not in your typical mashed and baked way.
Anyway..if you've seen these around but never tried them...it's time to
get to gettin'. They're tasty! And the nice thing is you can make as
many or as few as you want! Try topping them with some cheese before
broiling...and serve with some sour cream. Woo-hoo!!!
Crispy Crushed Potatoes
10 small Red Potatoes ~ skins on
5 tablespoons butter ~ melted
2 teaspoons Seasoned Salt (I used Lawry's)
1/2 teaspoon garlic salt
Shredded cheese ~ optional
Place parchment paper on a large rimmed baking sheet.
In a small bowl, melt butter. Stir in seasoned salt and garlic salt. Set aside at room temp.
Place potatoes in a medium saucepan and cover with water.
Boil potatoes until soft but not mushy.
Remove potatoes from the water and dry on a towel.
Place potatoes on your prepared pan.
With a potato masher, press down ONCE on potatoes to mash them.
Brush butter mixture over potatoes.
Set oven to "broil", top potatoes with shredded cheese, if using, and place in the oven for about 5 minutes until the tops are crispy.
Remove from oven and allow to cool for a few minutes.
Incredible!!! And SO easy!
