Soup! Who loves it? We do here in the SFFS house. This one was really
tasty. It's got a little bit of everything in it that I know a
cheeseburger does not have...but it's SOUPER good anyway. A little
chopping, a little stove top cooking and the hashbrowns create a
delicious little soup that's sure to please!
Cheeseburger Combo Soup
1 pound ground beef
1 medium onion ~ diced
3/4 cup diced carrots
3/4 cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
Salt & pepper to taste
4 tablespoons butter
1 32-ounce container chicken broth
3 cups Southern Style Hashbrowns
1/4 cup all-purpose flour
2 cups grated Cheddar cheese
1 1/2 cups milk
1/4 cup sour cream
In a large pot, melt 1 tablespoon of the butter. Add the veggies and saute about 5 minutes.
Add the ground beef and cook until beef is done.
Pour in the chicken broth and add the potatoes and spices.
Bring to a boil and simmer about 15 minutes.
In a medium saucepan, melt the remaining butter over medium heat.
Add the flour and cook about a minute.
Add the milk and whisk until smooth.
Add milk mixture to the large pot. Bring to a boil then reduce to a simmer.
Stir in the cheese until melted then add the sour cream and stir.
