Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Cheeseburger Combo Soup

Soup! Who loves it? We do here in the SFFS house. This one was really tasty. It's got a little bit of everything in it that I know a cheeseburger does not have...but it's SOUPER good anyway. A little chopping, a little stove top cooking and the hashbrowns create a delicious little soup that's sure to please!

Cheeseburger Combo Soup



1 pound ground beef
1 medium onion ~ diced
3/4 cup diced carrots
3/4 cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
Salt & pepper to taste

  4 tablespoons butter
1 32-ounce container chicken broth
3 cups Southern Style Hashbrowns
1/4 cup all-purpose flour
2 cups grated Cheddar cheese
1 1/2 cups milk
1/4 cup sour cream

In a large pot, melt 1 tablespoon of the butter. Add the veggies and saute about 5 minutes.

Add the ground beef and cook until beef is done.

Pour in the chicken broth and add the potatoes and spices.

Bring to a boil and simmer about 15 minutes.

In a medium saucepan, melt the remaining butter over medium heat.

Add the flour and cook about a minute.

Add the milk and whisk until smooth.

Add milk mixture to the large pot. Bring to a boil then reduce to a simmer.

Stir in the cheese until melted then add the sour cream and stir.

Serve it up with some extra cheese, diced tomatoes and a few diced green onions!
