Cinnamon Swirl Bread

2 cups warm water
2/3 cup nonfat dry milk
2 tablespoons yeast (3 packages)
1/4 cup sugar
2 teaspoon salt
1 cup butter ~ divided use
2 eggs ~ divided use
4 1/2- 5 cups all purpose flour
1/2 cup brown sugar
3 tablespoons cinnamon
Preheat oven to 350 degrees. Spray two loaf pans with cooking spray.
In a large mixing bowl, using the paddle attachment, stir in warm water and nonfat dry milk until it dissolves.
Add yeast, sugar, salt, 1/2 cup of the butter, 1 egg, and 2 cups of flour.
Mix on low speed until ingredients are combined, then 2 minutes at medium speed.
Switch to dough hook.
Add 2 more cups of flour, mix on low speed.
Add 1/2 cup flour, mix on low speed until combined, then 2 minutes at medium speed.
Dough should be soft, not overly sticky, and not stiff.
Scrape the dough off the sides of the bowl.
Spray a large bowl with cooking spray. Add dough to bowl and cover with a piece of plastic wrap that's been sprayed with cooking spray.
Allow it to rise in a warm place until the dough doubles in size and rises to the top of the bowl.
Once the dough has risen, place your dough on a floured surface, then divide the dough in half.
Roll each piece into a rectangle, about 8X12.
Mix remaining 1/2 cup softened butter, brown sugar and cinnamon together in a small bowl.
Spread half of the cinnamon mixture on each piece of dough.
Roll dough starting from the short end.
Place dough into prepared pan. Cover with plastic wrap that's been sprayed with cooking spray and allow to rise until doubled.
Brush with egg wash and bake for about 40 minutes until bread is golden brown. Remove from the pan and allow to cool.

Here's all you need.

Dissolve the dry milk in the water.

Add yeast, sugar, salt, 1/2 cup of
the butter, 1 egg, and 2 cups of flour.

Mix until combined.

Switch to the dough hook and add some flour.

Mix then add some more flour until
the dough isn't sticky but it's soft.

Place the dough into a greased bowl and cover.

Allow to rise to the top of the bowl.

Turn
onto a heavily floured surface.
You might need to add a little more
flour to the dough so it doesn't stick.
Don't knead it but fold it
gently. Press
out into two rectangles 8x12 inches each.
Cut in half.

Mix the remaining softened butter,
brown sugar and cinnamon...

...until it's combined.

Spread half of the cinnamon
mixture onto each half of the dough.

Roll the dough from the short end
and place in a greased pan.

Allow to rise until doubled then
brush with an egg wash.

Bake!!! So pretty, right?
