Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Hearty Pasta Sauce

Don't you just love spaghetti? I love it, especially with a good sauce. And this sauce is great! I used kalamata olives...which I love but IT Guy's not necessarily a fan. So good ole black olives will also work in this. I allowed this sauce to simmer for a good hour and when I removed the lid it was thick and rich and delicious.

Hearty Pasta Sauce



1 pound Italian sausage ~ any kind (I used sweet)
1 32-ounce jar pasta sauce
1 7-ounce jar Kalamata olives ~ drained (or black olives)
1 12-ounce jar artichoke hearts ~ drained and cut into bite sized pieces
1 onion ~ diced
2 cloves garlic ~ minced
salt and pepper to taste
Angel Hair pasta

In a large skillet, saute the onion and garlic in a little olive oil, until soft.

Add the sausage and cook until sausage is browned.

Add the drained olives and artichoke hearts and stir to combine.

Add salt and pepper.

Pour in the pasta sauce, stir and cover. Simmer about 30 - 60 minutes.

Serve over Angel Hair pasta.
