Not every recipe I make is loved by all. I get that. Not even in my own family. There’s a dip that I make that IT Guy loves. LOVES. I could make it every week and he’d be happy. But sometimes I like to switch things up and make other things. Like this onion dip. I went out with a bunch of my girlfriends the other night and we ordered a couple of trio appetizers and one of the things was an onion dip. It was really good so I thought...yep....I’m gonna make this. How hard can it be? Turns out, not so much. So I made it and loved it. #1 Son was all about it. So when IT Guy got home from work I served him some and he didn’t like it. At all. He said he had his mouth all ready for the OTHER dip even though he knew this was different so he couldn’t eat it. What a weirdo. But I’m here to tell you that this dip is good. Don’t listen to IT Guy. What does he know?
Onion Dip
3 sweet onions ~ sliced thin
3 tablespoons butter
3 tablespoons olive oil
1 8-ounce package cream cheese ~ softened
1 cup mayonaaise
1 cup sour cream
2 teaspoons salt (or to taste)
1 teaspoon pepper (or to taste)
In a large skillet, melt the butter with the olive oil.
Add onions to the skillet and cook until golden brown....maybe 20 minutes or so, stirring occasionally. Cool.
In a large mixing bowl, combine the cream cheese, mayo and sour cream.
Stir in the onions and salt and pepper.
Serve at room temp or chilled with potato chips or pita chips.
