Chocolate Rolo Cookies

Chocolate! A girl's best friend! I love it so I knew these cookies would be a hit even if I was the only one eating them. Sadly, I was not the only one eating them. Turns out boys like chocolate, too! Who knew?? Even without the Rolo candies in them, these cookies are a little bit of chocolate heaven! Try a different candy inside if you want...or just a bag of chocolate chips. Yummers!

Chocolate Rolo Cookies



1 10-ounce package chocolate chips
2 8-ounce bags mini Rolo candies
2 cups flour
1/2 cup cocoa powder
2 teaspoons baking powder
1 teaspoon salt
10 tablespoons butter (1 stick + 2 tablespoons)
1 1/2 cups brown sugar
1/2 cup sugar
4 eggs
2 teaspoons vanilla

In a medium bowl, melt the chocolate chips in the microwave at 30 second intervals until smooth. Stir between intervals.

In a large mixing bowl, cream the butter, vanilla and sugars until smooth.

Add the eggs, one at a time.

Add the melted chocolate chips.

Add the flour, cocoa, baking powder and salt on low speed and mix until combined.

Stir in the Rolo candies. Cover and chill for 30 minutes.

Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.

Scoop cookies onto cookies sheets about the size of a walnut.

Bake 10 - 12 minutes. Cool on baking sheets for 10 minutes before transferring to a wire rack.

And bake! As you can see, some of my Rolo's tried to escape. don't worry about it. After the cookies have cooled you can just break off the leaked caramel. And eat it. Not that I know anything about that.
