Remember the cinnamon chip debacle from a couple of months back? Remember how I went from store to store to store to try and find these little suckers? I finally found them and when I did I made sure I got enough to last me the whole year. So I decided it was time to use of one of my little prized packages to make cinnamon scones. Can I tell you what a good decision that was? I think I just did.
Cinnamon Chip Scones
with Cinnamon Glaze
2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1/3 cup sugar
4 tablespoons butter
2 tablespoons shortening
3/4 cup half & half (or heavy cream)
1 egg
1 bag cinnamon chips ~ divided use
Heat oven to 375 degrees.
In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well.
Cut in butter and shortening until mixture resembles coarse crumbs.
In a separate bowl, combine cream with beaten egg then add to dry ingredients.
Stir in 1 cup cinnamon chips.
Turn dough out onto a floured surface. Pat dough out to ½” thickness and cut into desired shape.
Place on cookie sheet lined with parchment paper.
Bake for 15 minutes or until lightly browned.
Makes 10 - 12 scones.
Cinnamon Glaze
Remaining bag of cinnamon chips ~ about 3/4 cup
3 cups powdered sugar
Milk
In a heat proof bowl, microwave cinnamon chips for 1 minute. Stir to smooth.
Add a couple of tablespoons to thin.
Add 1 cup of powdered sugar. Stir.
Add a couple more tablespoons of milk and stir.
Repeat with remaining powdered sugar and enough milk to make a smooth glaze.
Drizzle or drip over scones.
