Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. This candy turned out SO good. It tasted so familiar, though....like I've tasted something like it before but I just couldn't put my finger...or tongue...on it. The closest I could come might have been See's Candies pineapple truffles. But my recipe doesn't have a hint of pineapple OR dark chocolate..so that's why I'm not convinced its that. By the way...have you ever had a See's Candy pineapple truffle??? SO good!! But the following recipe is yummy, too! Very tropical tasting. A word of warning, though. Cut this candy in small pieces...it's rich!

Key Lime Candy


2 12-ounce bags white chocolate chips (3 cups)
1 can sweetened condensed milk
1 cup macadamia nuts – chopped and toasted
2 tablespoons Key Lime (or regular lime) juice
2 teaspoons lime zest

In a large saucepan over medium-low heat, melt the white chocolate with the sweetened condensed milk until smooth.

Remove from heat and add the chopped and toasted macadamia nuts, the lime juice and lime zest. Stir until well combined

Line a 8x8 inch baking pan with foil, bringing the foil up over the edge of the pan. Spray with cooking spray. Pour combined candy mixture into pan and smooth. Chill for two hours then remove from pan and foil and cut into bite sized pieces. Store in airtight container.

Makes 2 ½ pounds.

You don't need much....just a few things.
But to get started, melt the white chocolate 
in a saucepan with the sweetened condensed milk.
Zest your limes....
...chop and toast your macadamia nuts.
Add those to the chocolate mixture 
with the lime juice and mix well.
Prep your pan with foil and give it a 
light spray with cooking spray.
Pour the candy into the pan and chill it for a few hours.
Lift the foil and candy out of the pan. 
Flip it over and peel the foil off.
Cut the candy and then eat one piece.
This keeps in the fridge for a week or 
so or in the freezer for a couple of months!
