This candy turned out SO good. It tasted so familiar, though....like I've tasted something like it before but I just couldn't put my finger...or tongue...on it. The closest I could come might have been See's Candies pineapple truffles. But my recipe doesn't have a hint of pineapple OR dark chocolate..so that's why I'm not convinced its that. By the way...have you ever had a See's Candy pineapple truffle??? SO good!! But the following recipe is yummy, too! Very tropical tasting. A word of warning, though. Cut this candy in small pieces...it's rich!
Key Lime Candy
2 12-ounce bags white chocolate chips (3 cups)
1 can sweetened condensed milk
1 cup macadamia nuts – chopped and toasted
2 tablespoons Key Lime (or regular lime) juice
2 teaspoons lime zest
In a large saucepan over medium-low heat, melt the white chocolate with the sweetened condensed milk until smooth.
Remove from heat and add the chopped and toasted macadamia nuts, the lime juice and lime zest. Stir until well combined
Line a 8x8 inch baking pan with foil, bringing the foil up over the edge of the pan. Spray with cooking spray. Pour combined candy mixture into pan and smooth. Chill for two hours then remove from pan and foil and cut into bite sized pieces. Store in airtight container.
Makes 2 ½ pounds.
