Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Chicken Tacos

Back in the day...when I had a bunch of people that lived in my house, this was something I could make and please everyone, every time. And guess what? That still happens when I make these. Even though most of my kids are out on their own, they still love a good taco that they can only get at mom's house. Okay...so that may not be entirely true...they can get good tacos in their own homes, too. But sometimes mom's cooking just hits the spot.

Chicken Tacos

2 large chicken breasts ~ cooked and shredded
1 4-ounce can diced green chilies
1/2 large onion
2 tablespoons flour
1 cup chicken stock
1 teaspoon cumin
Salt and pepper to taste
Corn tortillas

In a large skillet, saute the onion and green chilies until soft and translucent. Add the seasonings.

Sprinkle the flour over the onion mixture and stir. Pour in the chicken stock and stir. Add the chicken and combine.

Remove from heat.

In a separate skillet, heat some oil over medium heat. Place a couple of heaping tablespoons of the chicken mixture on one side of a tortilla.

Gently place the filled tortilla into the oil, with the empty side of the tortilla going in first and the filled side weighing it down.

Allow to cook until light golden brown on one side then flip over to cook the other side.

Drain on paper towels.

Add lettuce, cheese, salsa, etc!
