Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Jalapeno Popper Pizza and a $1.00 off coupon from Mama Mary's

IT Guy is crazy about jalapeno poppers. Loves them. LOVES! So what better way to honor the popper AND IT Guy than to make a pizza with all the ingredients of a popper! Using a Thin & Crispy crust from Mama Mary's, this was easy to throw together and easy to bake. The only prebaking you need to do is the bacon but that's no big deal, right? Layer your ingredients and pop the whole thing in the oven for a few minutes and you've got dinner. Or appetizers if you want to go that route. Just a fun and different way to enjoy poppers AND pizza in one fell swoop!

Jalapeno Popper Pizza



1 Thin & Crispy Mama Mary's Pizza Crust
1 8-oz. package cream cheese ~ Softened (I only used 2/3 of the block)
1 pound bacon ~ diced and cooked crisp
2 cups pepper jack cheese
1 cup cheddar cheese
1 cup jalapenos ~ fresh or jarred (if using jarred, drain and pat dry)

Preheat oven to 425 degrees.

Spread cream cheese over crust.

Sprinkle with pepper jack cheese.

Scatter bacon over pepper jack cheese and top with jalapeno slices.

Sprinkle with cheddar cheese.

Bake for 10 - 15 minutes until bubbly and hot.

Jalapeno Bites


Here's a little snack I whipped up the other day for our open house. I needed a little appetizer and thought this might go over well. IT Guy loves jalapeno poppers that you can get at some fast food places, and these were a pretty tasty substitute. You can make them as hot as you like by leaving in some of the seeds. I made sure and took them all out because I wasn't sure how much heat people wanted. But they were very good....there were none left!

Jalapeno Bites



25 Wonton wrappers
5 - 6 fresh jalapenos
25 1-inch chunks of cheddar cheese
salt
1 egg - beaten
oil for frying

Slice washed jalapenos in half lengthwise. Slice off the tops. Remove seeds and veins. Cut each half into 1 inch pieces.

Brush edges of a wonton wrapper with egg wash.

Place a piece of jalapeno and a chunk of cheese on the wonton wrapper. Add a sprinkling of salt then fold the edges in to make a little package. Repeat with the rest of the wrappers, jalapenos, cheese and salt.

Heat oil to medium heat and fry the bites until golden brown. Drain on paper towels. Serve hot.

If you make the Sweet and Savory Quesadilla, you MUST have some jalapeno jelly to go with it. So here is the one I used. Please don't be afraid of this. It's more sweet than hot but it is spicy. All the seeds and veins are removed and as we all know, those two things are the source of the heat in a jalapeno. You're just left with something that has a little kick. If you don't want to make this....you can always purchase some but you've GOT to have it!

Jalapeno Jelly


1 green bell pepper
12 jalapeno peppers
1 ½ cups apple cider vinegar
Pinch salt
4 ¼ cups sugar
4 ounces liquid pectin
4 jalapeno peppers – seeded and finely chopped

In a food processor, combine the green bell pepper and the 12 jalapeno peppers. Process until finely chopped.

Transfer the peppers to a large saucepan and stir in the cider vinegar. Bring to a boil and let simmer for 15 – 20 minutes. Strain the mixture through two layers of cheesecloth or a fine mesh sieve. Discard pulp. You should have about 1 cup of liquid.

Return the liquid to the saucepan and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When mixture comes to a rolling boil, boil for one minute then stir in the pectin.

Stir in the remaining 4 chopped and seeded jalapenos. Ladle into clean jars leaving ¼ inch headroom. Place lids and rings on, turn jars upside to cool. When cool and lids are sealed down, store in the refrigerator.

Makes about 2 pint jars.

Remember: Jalapenos are hot! Don't touch your face, lips or eyes while handling them! BURN!!! Better yet, wear latex gloves while chopping!

Here's what you need!


Seed and devein the jalapenos. 
Then throw them, along with your bell pepper, 
into a food processor.


Chop 'em to bits!


Strain them to get this!


Stir in the sugar and salt and boil!


Then add the pectin.


Then throw in the diced jalapenos.


Ladle into clean jars then 
turn them upside down to seal!
