We love kielbasa around here. Do you ever use it? I love how it
flavors the whole dish! I know that traditional gumbo calls for okra but
the only way we eat okra here in the SFFS house, is fried. So I left it
out of this recipe. But...it was so good anyway. You gotta try this!

Kielbasa & Chicken Gumbo
1 pound Kielbasa sausage ~ sliced into "coins"
3 large chicken breasts ~ cooked and coarse shredded
1 large onion ~ diced
1 red bell pepper ~ large chunks
1 cup celery ~ sliced
2 garlic cloves, minced
2 teaspoons Cajun seasoning
1/8 teaspoon ground Cayenne pepper
1 48-ounce container chicken broth
1 cup long grain rice
In a large pot, saute the onion, celery and garlic until soft.
Add the sausage and cook until sausage has browned a bit.
Add the chicken broth, chicken, red bell pepper, Cajun seasoning, and Cayenne pepper.
Stir until combined and bring to a boil.
Add rice, cover and allow to simmer for 20 - 30 minutes until rice is done.
