Okay..so these little guys are pretty stinkin' good. They are prefect
little appetizers but you could make them for dinner, too. I used
won-ton wrappers which made them nice and crunchy but using puff pastry
would be marvy! And if you get the pre-made puff pasty shells, then that
would be even easier! The filling is really tasty and could be used
with just about anything. Try biscuits! Throw some of the filling in a
little casserole dish and top with a flaky biscuit! How good would THAT
be?
Cheesy Chicken Cups
2 tablespoons butter
2 tablespoons flour
1 cup milk
Salt
Pepper
1 cup grated cheddar cheese
Pinch cayenne pepper
1 large chicken breast ~ cooked and diced
1 cup broccoli, finely chopped
12 - 15 won-ton wrappers
In a medium saucepan, melt the butter.
Stir in the flour and cook, stirring constantly, until mixture cooks and bubbles, about 2 minutes.
Add the milk, continuing to stir as the sauce thickens. Bring it to a boil. Add the cayenne pepper, salt and pepper to taste.
Lower the heat, and cook 2 to 3 minutes more, stirring continuously.
Remove from the heat.
Add cheese and broccoli and stir until melted.
Stir in cooked chicken.
Place one won-ton wrapper into each cup of a muffin tin.
Fill cups with chicken/cheese mixture.
Bake until won-ton wrappers are golden and mixture is bubbling, about 15 minutes.
