Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Summer Salad with Poppyseed Dressing

IT Guy and I went out to eat not long ago and I had a salad. I love a GOOD salad. And the salad I had was GOOD. I knew I had to make it for myself at home and I did. This was the result. I think I ate the whole thing in two days. I couldn't stay out of it. #1 Son works nights so when he came home from work one morning, I was eating it. He went to bed and when he got up later that afternoon, I was eating it again. His words to me were, "weren't you JUST eating that this morning?" My response was "yeah, what of it, punk?". Okay...not really. I just nodded my head and kept shoveling it in. Really, really, REALLY good!!!!

Summer Salad



1 bag Romaine lettuce
Strawberries
Blueberries
Mandarin oranges
Pineapple slices
1 - 2 boneless, skinless chicken breast ~ cooked and sliced
Pecans

Poppyseed Dressing
4 teaspoons cornstarch
6 tablespoons cold water
1-1/3 cups orange juice
1/4 cup white vinegar
4 teaspoons honey Dijon mustard
4 teaspoons honey
1-1/2 teaspoons poppy seeds
1/2 teaspoon salt

In a small saucepan, combine cornstarch and cold water until smooth.

Stir in the orange juice, vinegar, mustard and honey.

Bring to a boil; cook and stir for 1 minute or until thickened.

Stir in poppy seeds and salt.

Cover and refrigerate until chilled. 

Combine lettuce, pecans and fruits in individual serving bowls.

Lay some sliced chicken top and drizzle with dressing.
