Banana Split Poke Cake

Are you a banana split lover? Or even a liker? This little poke cake is so fun and tasty and would make a perfect birthday cake! I used a jar of baby food bananas because for some reason I either NEVER have bananas or have so many they go bad. The day I made this I decided to try the baby food route because I've heard it works just as good as a REAL banana. Guess what? It did! This cake is yummy and fun twist on a banana split!

Banana Split Poke Cake



1 yellow cake mix
1 stick butter ~ softened
4 eggs
1 6-ounce jar banana baby food (or 3/4 cup mashed banana)
1/2 cup milk

1 cup milk
1 3-ounce package instant banana pudding
1 cup strawberry preserves
1 8-ounce container Cool Whip
1/2 cup chopped peanuts
1/2 cup rainbow sprinkles
1/2 cup mini chocolate chips
Maraschino cherries

In a large mixing bowl, combine cake mix, butter, eggs, milk and banana until smooth.

Pour mixture into a greased 9x13 inch baking dish.

Bake according to package directions for a 9x13 inch cake.

When cake is finished baking and still warm from the oven, poke holes all over the top.

Mix milk and pudding and pour into holes while cake is warm, making sure the pudding gets down in the holes.

Chill for a few hours.

Spread strawberry jam over the top.

Spread Cool Whip over the top.

Sprinkle with peanuts, sprinkles and chocolate chips. 

Add cherries on top.

Here's what I used. Except the chocolate topping. I left that out at the last minute. Also..the milk measurement should be 1-1/2 cups.
