Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Zucchini Boats

I've never been much of a stuffed pepper fan. Don't get me wrong, I love bell peppers but not that much. So putting this mixture into a zucchini worked great for me. I seasoned the meat with some creole seasoning and that gave the mixture the perfect taste! You almost don't need much else with this dish since you've got the meat and veggies all wrapped up in one little package. I served it with a fresh fruit salad and it was the best!

Zucchini Boats



3/4 pound ground beef
3 - 4 medium sized zucchini
1 small red bell pepper
1/4 cup diced onion
2 teaspoons Creole seasoning
Salt & pepper to taste
2 cups shredded mozzarella cheese

Preheat oven to 375 degrees.

Slice zucchini in half lengthwise. Scoop out the inside and set it aside. Lay zucchini shells on a cookie sheet.

In a medium skillet, saute the onion, bell pepper and the reserved zucchini in a little olive oil for about 10 minutes.

Add the ground beef and cook until almost done.

Add the seasonings and stir through.

Add half of the cheese into the meat mixture and stir.

Scoop meat mixture into the zucchini shells.

Top with remaining shredded cheese.

Bake for 30 minutes.
