Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Slow Cooker Chicken Fajitas

It's always fun to figure out a way to make our favorite things easier. I make slow cooker tacos all the time so why not fajitas? I used chicken for these but you could use beef or a chicken/beef combo. I also used my homemade fajita seasoning but a store bought packet works, too. Really good, really simple and an all-around family pleasing meal!
Slow Cooker Chicken Fajitas



3 bell peppers ~ cut into strips
1 large onion ~ sliced
4 - 6 chicken breasts
1 packet (or 3 tablespoons) fajita seasoning
Salt and pepper to taste
1/2 cup water OR chicken stock

Pour the water OR chicken stock into the crock then add the veggies.

Lay the chicken on top then season with salt, pepper and fajita seasoning.

Cook on high 4 - 6 hours until chicken is done.

Remove chicken from the crockpot and shred.

Return meat to the crockpot and stir.

Serve with flour tortillas, salsa, guacamole and sour cream.
