Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Mini Peach Cobblers

Years and years ago my mom gave me cobbler crust recipe that she knew would come in handy for me as a new bride since I had no idea what to do in a kitchen besides eat. Pie crusts were beyond my realm so this little recipe came in perfect for me when I felt like making IT Guy a dessert. I've kept it all these years and have used it quite a lot when I wanted a fast and simple dessert for the fam. These little one serving cobblers are perfect to serve at a party when you might have lots of desserts but people only want a little bit. A potluck would be another ideal place to take this. Or like us...just pile two or three cupfuls in a bowl with some ice cream and you're good to go! A fun new twist on an old favorite.

Mini Peach Cobblers



Cobblers

1 stick butter ~ cut into 12 pieces
1 cup sugar
1 cup flour
1 teaspoon baking powder
1/2 cup milk
dash salt
1 - 2 cups frozen peach slices

Preheat oven to 350 degrees. Spray a 12 cup cupcake tin really well with cooking spray. Or line the cups with paper liners, sprayed with cooking spray.

Place 1 piece of butter into each of the cups in the cupcake tin.

In a medium bowl, combine the flour, sugar, baking powder, milk and salt. Stir well.

Divide batter between the cups. 

Dice peaches and divide between the cups. I used 1 - 1 1/2 slices per cup. 

Allow to cool then use a spoon to remove.


Topping

1/4 cup butter ~ softened
1/4 cup brown sugar
1/4 oats
1/2 teaspoon cinnamon

Combine all ingredients in a small bowl. Divide mixture between the 12 cups and spoon on top of peaches.

Bake for 30 minutes until batter is light golden brown.

Serve with a scoop of ice cream.

Bake! My batter over-ran a little bit. I just used a knife to push it back into the cup. No big deal.
