Cobblers are one of my most favorite things. Cherry and berry are the best, in my opinion. Also...I love peach. I don't think I've ever made a strawberry cobbler before, though. But because I have a huge bag of strawberries to use up...I thought..ehhh..why not? Oh my!!! Where has this been all my life! This lasted practically no time at our house...you'd think these people never get dessert! I think IT Guy had it for breakfast a couple of times, as a matter of fact. Really good and the Bisquick topping makes it super simple! Try it...NOW!
4 cups quartered strawberries (fresh or frozen)
1 1/2 cups sugar ~ divided use
1 teaspoon vanilla
1 cup Bisquick
1 stick butter ~ melted
1/2 stick butter ~ melted
Sugar for sprinkling ~ optional
In a medium bowl, combine strawberries, 1/2 cup sugar and vanilla. Allow to sit at room temp 2 hours.
Preheat oven to 350 degrees. Spray a 9x13 inch baking pan with cooking spray.
Spread strawberry mixture in the bottom of the prepared pan.
In a medium bowl, combine the Bisquick, sugar, egg and 1/2 stick melted butter.
Scatter Bisquick mixture over berries.
Pour remaining 1 stick melted butter over Bisquick mixture.
Sprinkle with a little sugar.
Bake for 35 - 40 minutes until lightly browned.
