Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Peach Iced Tea

I always order the yummy peach tea when I go to Olive Garden. I don't go very often so consequently, I don't get to have peach tea very often. Until now! While not exact, this little drink fills in nicely! I was pleasantly surprised when I took my first sip. Yum! Then I promptly hid it in the back of the fridge <evil grin>. Aww...just kidding. I let IT Guy have a tiny sip of mine. He liked it! So yay! I think you will, too!

Peach Iced Tea

6 cups water
3 large tea bags
1 16-ounce bag frozen peaches
2 cups water
2 cups sugar

Boil the 6 cups of water. Remove from heat. Place tea bags in water and cover. Allow to steep for about 10 minutes. Remove tea bags and cool.

In a medium sauce pan, combine the 2 cups of water with the sugar. Bring to a simmer over medium heat then carefully add the peaches. Cook for about 15 minutes or until mixture is thickened.

Remove peach mixture from the heat and mash peaches. (I used my potato masher but you can put the mixture in a blender). Run the mixture through a fine mesh sieve to remove large chunks.

Combine tea and peach mixture into a large pitcher.

Serve over ice!

Okay....let's go! (You see 4 tea bags but I only used 3.)
