These last few days of cool weather make me crave casseroles. We love
them and they're so easy to throw together. I was able to put this
together in about 30 minutes...then bake it..and it was done. It makes
enough for 4 hungry people with a little leftover. I love anything ham
and potato...and this was great. Really delicious!!
Ham Casserole
2 cups peeled and cubed potatoes
2 stalks celery ~ diced
1 cup diced carrots
3 tablespoons butter
1 16-ounce package ham steaks ~ diced (about 2 cups diced ham)
1 small green bell pepper ~ diced
1 small onion ~ diced
1/4 cup butter
3 tablespoons flour
1 cup whole milk
Salt & pepper to taste
1 cup grated Cheddar cheese
1/2 cup Panko crumbs
2 tablespoons butter ~ melted
Preheat oven to 350 degrees. Grease a 9x13 inch baking pan.
Place potatoes, celery, and carrot in a large pot and add enough water to cover. Bring
to a boil then reduce heat to medium and simmer until tender, about 20
minutes.
Drain and transfer to a large bowl.
Melt the 3 tablespoons butter in a large skillet over medium heat. Add
ham, green bell pepper, and onion and cook until vegetables are tender, about 5
minutes.
Pour mixture into the large bowl with the potatoes.
Melt 1/4 cup butter in a small saucepan. Whisk flour into the
melted butter until smooth and cook about 1 minute.
Gradually stir in milk and season with salt and pepper.
Bring to a boil, stirring constantly, until thickened, about 2 minutes.
Add Cheddar cheese and stir until melted.
Pour cheese mixture over ham and potatoes in the bowl and stir to combine. Pour into the casserole dish.
Combine the 2 tablespoons melted butter with the Panko crumbs. Sprinkle over casserole.
Bake in preheated oven until bubbly, 25 to 30 minutes.
Allow casserole to rest for 5 to 10 minutes before serving.
