Here's a super simple no cook dessert from my family cookbook. My
oldest cousin was the contributor of this recipe. In the cookbook he
calls it "Nanner Cream Cheese Pie" but I just can't make myself say that
so I'm sticking with Banana instead of Nanner. What's funny about this
is the very last line in the recipe says..."this is great. It will knock
your socks in the creek". And you know what? He's right! This was
really good. The cream filling has a little lemon kick to it which I
enjoyed and it helped to tone down the banana. All the right flavors for
an easy and delicious pie!
Banana Cream Cheese Pie
3 medium bananas
1 8-ounce package cream cheese ~ room temperature
1 can sweetened condensed milk
1/3 cup lemon juice
1 teaspoons vanilla
1 8-inch graham cracker crust ~ recipe follows (or use store bought)
Graham Cracker Pie Crust
1 1/2 cups graham cracker crumbs
1/3 cup sugar
6 tablespoons butter ~ melted
Mix all ingredients in a medium bowl. Press mixture (reserving 1/4 cup) into pie plate.
Beat cream cheese until light and fluffy.
Gradually add sweetened condensed milk.
Add lemon juice and vanilla.
Slice bananas and line the pie crust.
Pour filling over the bananas and top with a few graham cracker crumbs.
Chill for at least 2 - 3 hours.
