I love me some fried rice. So throwing some pork in the mix makes it a
meal! I had some ham, but you could use almost anything...a couple of
pork chops or a pork roast. This is just a really easy and yummy dish!
Pork Fried Rice
2 green onions ~ finely chopped
2 eggs
1/2 teaspoon salt
Pepper to taste
2 tablespoons oil for stir-frying ~ divided use
2 cups cold cooked rice
2 tablespoons soy sauce
1 cup frozen peas and carrots
1 cup cooked pork (such as leftover porkchop, diced ham, etc)
Heat
a wok or frying pan and add one tablespoon of oil. Add the eggs and
cook, stirring, until the eggs are lightly scrambled but not dry. Remove
the eggs to a small bowl and clean out the pan.
Add
the remaining oil to the pan. Add the rice. Stir-fry for a few minutes,
breaking it apart as it heats. Stir in the soy sauce.
Add the green onions, eggs and veggies, and pork to the pan.
Stir to combine and allow to warm through.
