or taquitos. Especially when I'm not that hungry. It's just a little
bit but still tasty. These are really good. And if you don't have
all day to cook a roast, you can certainly use ground beef instead of the roast. Or even chicken. There are just so many ways to change these up. Make them spicier if you want. Or cheesier!
Just make 'em!!
Flautas

1 2-pound chuck roast
1 7-ounce can diced green chiles
1/2 cup water
1 medium onion ~ diced
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
1 teaspoon salt
1/2 teaspoon pepper
10 - 12 flour tortillas
2 cups grated cheese
oil for frying
Combine spices in a small bowl.
Place roast in crock pot. Add water.
Sprinkle with spice mixture.
Add green chiles and onion.
Cook on low for 6 - 8 hours until tender.
Heat oil in a large skillet over medium heat.
Remove roast, along with the chiles and onion, from crock pot to a plate. Shred meat.
Heat flour tortillas in the microwave, one at a time, for about 10 seconds.
Add a few tablespoons of the meat and a sprinkling of cheese.
Roll tortilla up and place seam side down into the hot oil. Fry 2 - 3 minutes per side until golden brown. Drain on paper towel and keep warm in the oven until all flautas are cooked.
Serve with salsa, guacamole, and sour cream.

Let's do this!

Combine your spices.

Add the roast, water, spice mixture,
green chiles and onions to the crock
pot and let it cook all day until tender.

Remove the roast from the crock
pot along with as much of the chile
and onion as you can. The shred the meat.

Place some meat and cheese onto
a heated flour tortilla then roll up.

Cook seam side down in hot oil
for a few minutes on each side.

You want them golden brown, like this!

Then serve with your favorite toppings! So yum!
I'm celiac and would have to make flour tortillas. Do you think this would work with corn tortillas?
ReplyDeleteLisa, yes it would. I think they would be called taquitos. I've always understood that flautas are made with flour tortilla and taquitos are made with corn, but the filling is the same. It's gonna be great, trust me!
