Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Easy Broccoli Cheese Soup

I love broccoli cheese soup. Whenever IT Guy and I go to Panera, I order it because it's delicious and because I love it. Did I mention I love it? This easy soup is just as good and do you want to know the best part? You don't have to leave your house to get it!!

Easy Broccoli Cheese Soup




2 tablespoon olive oil
1 onion ~ finely diced
1 clove garlic ~ minced
3 cups milk
2 cans cream of chicken soup
2 pound block of Velveeta Cheese ~ cut into large chunks
1 25-ounce bag broccoli pieces (I cut up the larger pieces)

In a large dutch oven, saute the onion and garlic in the olive oil until tender.

Add the milk and cream of chicken soup. Stir until combined.

Add the Velveeta and simmer until cheese is melted, stirring often.

Add broccoli and simmer for another hour or so until hot. 

Serve with hot french bread.
