Breaded Ranch Chicken


My mom gave me this recipe years ago when my kids were younger. They loved it then and they love it now. It's easy to prepare and will please the whole family, not just the kids.  We hardly ever have leftovers of this tasty dish!

Breaded Ranch Chicken


The finished dish!

1 cup crushed cornflakes
1 cup Parmesan cheese (yes...the stuff in the green can)
1 envelope Ranch dressing mix
4 – 6 boneless chicken breasts
½ cup butter, melted

Preheat oven to 350 degrees

In a shallow bowl, combine cornflakes, Parmesan cheese and ranch dressing mix. Dip chicken in butter then roll in cornflake mixture to coat. Place chicken in a greased baking dish. Sprinkle any remaining cornflake mixture or butter over chicken. Bake uncovered for 45 minutes.




See the parm? I used the cheap stuff because that's what I had on hand. I also slice the chicken breast in half lengthwise.

Dip, dredge. That's the process...pretty easy, yes?
