Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Red Velvet Crackles

I had such success with the Lemon Crackles the other day I figured I'd try something else. How fun are these? We loved them just as much as the lemon ones. If you don't want to use crushed Oreo's to roll the cookies in,  then just use some powdered sugar. I wanted more of a chocolate taste but I'm thinking the powdered sugar would be awesome, too!! These are SO easy, don't make a ton and are not overly sweet...but they give you that cookie satisfaction!

Red Velvet Crackles

1 Red Velvet cake mix
2 eggs
1/3 cup oil
12 Oreo cookies OR 1/2 cup powdered sugar

Preheat oven to 375 degrees. Line two baking sheets with parchment paper.

In a mixing bowl, combine the cake mix, eggs and oil.

Chop the cookies in a food processor until you have fine crumbs. Pour into a shallow bowl.

With a small cookie scoop, scoop cookie dough into the crumbs and press crumbs into the dough ball.

Place rolled cookies onto prepared baking pans and bake for about 8 - 9 minutes until set.

Cool. Makes about 2 dozen.

Here's the line up. I found these
mini Oreo's at Walmart for a buck.
I show two in the picture, but only used
one...and not even the whole package. FYI.

Mix the cake mix, eggs and oil
in mixing bowl until combined.

Whizz the cookies in your food
processor or place the cookies in
a plastic bag and beat the daylights
out of them with a rolling pin.

Roll the dough balls in the cookie crumbs.

Place on your prepared cookies sheets and bake.

Allow to cool then enjoy!
