Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. My daughter told me about a soup she made in the crock pot the other day. It was a creamy soup with tortellini and spinach. She had pinned it on Pinterest so I went over to take a peek. Yep...looked really good. REALLY good. But..I'm not much of pre-packaged white sauce fan so I decided to make my own version of the soup...without the pre-packaged stuff and without the crock pot. My daughter added chicken to her version but I left it out although I have to say, I think IT Guy would have preferred the meat. It was really good without it though. REALLY good.

Creamy Tortellini Soup

 

4 tablespoons butter
1 medium onion ~ diced
2 cloves garlic ~ minced
4 tablespoon flour
2 cups half & half or milk
1 32-ounce container chicken broth
1 12-ounce package three cheese tortellini
4 cups baby spinach ~ torn
1/2 teaspoon cayenne pepper
salt & pepper to taste

Melt the butter in a large dutch oven.

Add the onions and garlic and cook until tender.

Sprinkle flour over onion and cook for a minute or two.

Slowly pour in the chicken broth and stir until combined. Add the cayenne pepper and salt and pepper.

Cook on medium heat until thick.

Pour in the half & half and allow to come to a low boil.

Add the tortellini and cook until pasta is tender.

Add the torn baby spinach and simmer until wilted and tender.


Let's go!! Here's what you need.


Saute the onion and garlic in a little butter.


Add the flour and cook and 
stir for a minute or so.


Then add the chicken stock.


Add the seasonings and cook until thickened.


Pour in the half & half.


Dump in the tortellini and 
allow to cook until done.


Add the torn spinach and cook
 until the spinach is wilted.


Eat!
