Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. I decided to use my cast iron skillet to make dessert. Whereas apple pie is not one of my favorites, it IS one of IT Guy's. This was fun, easy and different. It actually was very good. I had a piece and enjoyed it quite a bit. Over the next few days, IT Guy had lots of pieces and enjoyed every bite, I assume, because every time I looked at the skillet, there was a little more of the cobbler missing and I knew I wasn't eating it! You could do this with berries or cherries...which would be MY preference. However you make it, make it!!

Skillet Apple Cobbler

 

Preheat oven to 350 degrees.

Filling:

5 – 6 cups apples ~ peeled, cored and large diced
1 teaspoon vanilla extract
1 tablespoon lemon juice
1/3 cup sugar
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons cornstarch

In a large bowl, combine apples, lemon juice and vanilla. Set aside.

In a medium bowl, combine sugars, cinnamon, nutmeg and cornstarch.

Sprinkle sugar mixture over apples and toss to coat.

Crust:

1 cup sugar
1 cup flour
1 teaspoon baking powder
dash salt
1/2 cup milk

Combine dry ingredients in a medium bowl. Add milk and stir until combined.

In a large cast iron skillet, melt one stick of butter over medium heat. Remove from heat.

Add half the crust mixture to the pan. Top with apples then drizzle the rest of crust mixture on top.

Bake for 45 - 50 minutes until top is golden brown.



The line-up.


Core, peel and chop your apples. 
Then pour the vanilla and lemon 
juice over the apples and toss.


Combine the sugars, cinnamon, 
nutmeg and cornstarch.


Sprinkle the sugar mixture over the 
apples until the apples are all coated. 
Set aside.


Next..combine the dry
 ingredients for the crust.


Then add in the milk.


Melt a stick of butter in your skillet. 
Remove from heat.


Add half of the crust 
mixture into the skillet.


Then add the apples.


Then drizzle with the rest of the crust mixture.


Bake until the top is light golden brown.


Serve with ice cream!!!
