Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. If you want something yummy, make this! When IT Guy smelled it as he walked in the door from work, I could tell he was going to be happy, happy. The nice thing about this dish is that you can use pork like I did, or you can use chicken breast. 
Whatever you decide to use....
I hope you make this so you can be happy, happy too!

Mexican Pork Chops


3 tablespoons vegetable oil
6 boneless pork chops (or use chicken breasts)
Salt and pepper to taste
3 cups water
1 1/2 cups uncooked long-grain white rice
1 8-ounce can tomato sauce
1 4-ounce can diced green chilies
1/4 cup taco seasoning mix (I used my own recipe. Number 174 in the recipe box)
2 cups shredded Cheddar cheese

Preheat oven to 350 degrees. Spray a 9x13-inch baking dish with cooking spray.

Heat the oil in a large skillet over medium heat. Sprinkle pork chops with salt and pepper. Brown them on both sides for about 5 minutes on each side. Set chops aside.

Pour rice into the prepared dish.

Mix the water, tomato sauce, green chilies, and taco seasoning and pour over the rice.

Lay the chops on top of the rice mixture. Cover with foil.

Bake about an hour.

Uncover the dish, and sprinkle with cheese.

Return to the oven, and bake uncovered until the cheese is melted and bubbly, 5 to 10 more minutes.

I totally forgot to take a picture of the chops browning in the skillet so but I guess you know what that looks like. 
But..here's a picture of the water, green chilies, 
tomato sauce and the taco mix all combined.

Pour your rice in a greased pan, 
then pour the liquid mixture over the rice.

Then place your browned chops on top of the rice.

Cover and bake for an hour.

Remove from the oven and sprinkle with cheese. 
Bake another 10 minutes, uncovered.

Your house will smell amazing!!

And your tummy will be so happy!
