Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

As I am known to do, I didn't want to leave the house the other day, and since I was gone the previous weekend, the cupboards were a little bare when it came to things to make for dinner. So...it was a treasure hunt in the freezer! Can I just say....yummy? What a nice surprise this turned out to be! I usually reserve puff pastry for desserts, but this time I incorporated it into the main meal and I loved it! Very easy! Since smoked sausage is already cooked, it's just a matter of browning the pastry so it was a quick meal as well as delicious!

Smoked Sausage in Puff Pastry

1 pound smoked Sausage
1 sheet of puff pastry
1 onion, sliced and caramelized
2 eggs, beaten

Sauce

1/2 cup ketchup
2 teaspoons Worcestershire sauce
2 teaspoons white vinegar
1/4 c. brown or white sugar
1/2 teaspoon cayenne pepper

Heat over to 375 degrees. Place parchment paper on a rimmed cookie sheet.

Roll puff pastry out into a 10 x 14 inch rectangle.

Cut into 6 equal square pieces.

Cut sausage into 6 equal pieces.

Combine sauce ingredients in small mixing bowl.

Lay one piece of sausage and some of the onion on a piece of pastry. Spoon a tablespoon of sauce over sausage.

Paint the edges of the pastry with the egg and fold to seal. Brush the pastry all over with the egg.

Place sealed pastry onto the prepared cookie sheet.

Bake for 25 - 30 minutes until pastry is brown.

Serve with extra sauce or regular barbeque sauce.

Here's what you'll need. Oh...and two eggs.

Mix up the stuff for the sauce and set it aside.

Caramelize the onion and set those aside.

Roll out the pastry a little larger than the original size. Mine was probably 10 x 15 or so. Then cut it into 6 equal pieces.

Cut the sausage into 6 equal pieces. Brush each piece around the edges with the beaten egg. Then lay a piece of sausage, a spoonful of sauce and some onion on top of a piece of pastry and fold it up.

Then brush each bundle all over with more beaten egg.

Then bake!

So yummy!!! Loved these so much.
