Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Mozzarella Chicken

This recipe is so easy and delicious. It calls for for jarred pasta sauce, but if you have a homemade version you like, then by all means use that. I think there are so many tasty jarred sauces out there and so many times, they've just been a lifesaver to me. I've been serving this to my family for a long time and it never gets hum-drum.

Mozzarella Chicken


6 – 8 chicken boneless, skinless chicken breasts
1 onion – diced
2 cloves garlic - minced
3 cups pasta sauce (1 pound 10 ounce jar)
6 – 8 slices mozzarella cheese
Salt
Pepper
Olive oil

Season chicken breasts with salt and pepper. In a heated skillet, drizzle about 3 -4 tablespoons of olive oil. Place chicken in skillet and allow to brown for a few minutes on each side. Remove to a clean plate and set aside.

In the same skillet, sauté diced onion and minced garlic until onion is translucent then add chicken back in on top of onion and garlic. Pour pasta sauce over chicken and cover. Simmer on low for about 30 minutes.

Place cheese on top of chicken, cover and let cook another 2 – 3 minutes until cheese is melted.

Serve over pasta….fettuccine, angel hair, etc.


Here are all the goodies....
Season the chicken then brown it in a skillet with a little olive oil. 
Remove chicken to a plate when browned.
Saute the onion and garlic then....
...add the chicken back to the skillet.
Pour the pasta sauce over the chicken. Cover and let it simmer for about 30 minutes.
Sprinkle with mozzarella cheese. I used shredded but slices work, too! Cover.
Let the cheese get all melty and gooey for a few minutes. Serve over pasta!
