Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

I know this recipe has been around the block several times, but to me...it just doesn't get old. It's one of my most favorite things. I like to think I'm being a little bit healthy when I eat it....I just ignore the mayonnaise. Of course, I think you could probably use fat-free mayo and it would be fine. If you've never eaten this or made it, then today's your lucky day!

Broccoli Salad

Salad ingredients:

2 – 3 bunches broccoli – washed and cut into flowerettes
2/3 cup shelled sunflower seeds
1 cup golden raisins
½ cup diced red onion
1 pound bacon – diced and cooked crisp

Combine above ingredients in a large mixing bowl.

Dressing:

1 cup mayonnaise
1 tablespoon apple cider vinegar
3 teaspoons sugar

Whisk all 3 ingredients together in a small mixing bowl and pour over combined broccoli mixture. Stir to coat. Chill and serve.

All our little friends!

Instead of frying the individual bacon strips, just dice it up and fry it all at once in large skillet.

Presto! Instant bacon crumbles!

Chop up the broccoli. I like to just use the flowerettes but if want to use more of the stalk, then that's okay.

Chop up the onions, too!

Here's the stuff for the dressing. Mayo, sugar and apple cider vinegar.

Just mix it all together.

Combine everything in a large bowl and chill it for a while. The longer it sets, the better it is!

Ahhh...perfection!
