Chocolate Crackles

Chocolate Crackles  





Preheat oven to 350 degrees
Line 2 cookie sheets with parchment paper



2 ounces unsweetened chocolate
½ cup oil
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup flour
¼ teaspoon salt
1 teaspoon baking powder
1 cup chocolate chips
½ cup powdered sugar


Melt chocolate and set aside. Cream oil, sugar, eggs, and vanilla. Stir in melted chocolate. Beat in flour, salt, and baking powder. Stir in chocolate chips. Refrigerate for two hours. Form into ¾ inch balls then roll in the ½ cup powdered sugar. Bake for 10 – 15 minutes until cookie tops “crack” open. Cool on baking pans for about 5 minutes then remove to wire cooling racks.


Makes about 2 dozen cookies
